Some people call it catsup. Some people call it ketchup. I call it crap. Make your own.

MAKES 3 CUPS

4 tablespoons olive oil
10 ripe tomatoes, chopped
2 red onions, diced
3 cloves garlic, diced
1 cup cider vinegar
1 cup brown sugar (or 4 teaspoons molasses and 1 cup Splenda)
1/4 teaspoon dry mustard
1/4 teaspoon cinnamon
pinch cloves
pinch allspice
pinch cayenne pepper
Salt substitute

  1. Heat the oil in a large saucepan over medium-high heat.
  2. Combine with tomatoes, onions, garlic, mustard, cinnamon, clove, allspice and cayenne pepper sauteing for 3-4 minutes;
  3. Lower heat and simmer for 35 minutes, stirring as necessary;
  4. Remove from heat and strain to remove pulp;
  5. Put it back in the saucepan on medium heat and reduce by half, usually 10-15 minutes;
  6. Add vinegar and brown sugar (or sugar substitute), cook an additional 25 or so minutes until the ketchup reaches the desired consistency;
  7. Keep it in fridge in an airtight bottle;
